Mint Brownies 

Hands down the best mint brownies in the world. Trust me! I know my brownies.

Jennifer Hyde in Logan, Utah gets all the credit. I stole this recipe from her and I am famous in Birdseye, UT for these suckers.

Step 1:

      Preheat oven to 350º. In a medium mixing bowl combine 2 cups sugar, 1 cup melted butter 2/3 c. cocoa and 4 eggs- one at a time, mixing between each. 

Step 2: 

     Add 1 1/2 cup flour and mix until blended.  Pour into greased 9x13” pan and bake for 20-25 minutes.  Allow to cool before frosting.

Step 3:

         Whip together 1 pound powdered sugar, 2 cubes butter, 1-3 T. milk, 4 drops green food coloring and 2 drops peppermint oil or mint extract.  Mix until smooth.  Taste and add more mint oil if needed.  

Step 4:

     Create ganache by mixing 3/4 c. semi-sweet chocolate chips and 1/4 c. butter. Melt in microwave for 1 minute and mix, continue microwaving and mixing until smooth.

Assembly:

      When brownies are cool, frost with mint frosting.  Drizzle with ganache. Store in refrigerator until ready to serve.  Serve at room temperature for best taste.  

Tip:

      For Festive Christmas Brownies, use red food coloring and add smashed peppermint candycanes to the top.  

Try not to eat the whole pan in one sitting. ✌🏼
